There is no easy answer to your questions. The cowboys in different parts of the country talk differently from one place to the other. Here on the plains, we tend to drop our g’s. For instance: "I was talkin’ to Joe today". We do still say ain’t though we know we aren’t supposed to: "This ain’t my first rodeo" (which means, don’t tell me how to do that, I already know). One thing they aren’t is ignorant, so if you are writing a book, don’t make them look that way. One will hunt you down and stomp a mud hole in you! There are cowboys all over the country, try finding some and hang out with them, that would be the best place to learn how they talk.
